Sweet and Sour Cabbage and Apple Salad

Serves 4.  Prep: 20 min.  No cooking

This unique combination of flavors is crisp, sweet, and tangy all at once.  Try it as a side dish with pork or potato fritters!

INGREDIENTS:
½ medium head of green cabbage, shredded
½ small red onion, chopped fine
1 large tart apple peeled, cored and cut into ¼ inch pieces
1 Tablespoon honey
2 Tablespoons rice vinegar
2 Tablespoons olive oil
1 teaspoon mustard
½ teaspoon sea salt
2 teaspoons fresh parsley minced

STEPS:            

  1. Combine the cabbage, red onion and apple in a large bowl.
  2. Whisk together the remaining ingredients to make a dressing.
  3. Pour over the veggies and toss well.
