Stovetop Blueberry Cobbler

Here’s a great summer dessert that is easy to make and doesn’t require using the oven! Serve with a dollop of yogurt or ice cream.

Serves: 6-8
Preparation: 10 min.
Cooking Time: 30 min.

Ingredients:
  • 4 cups blueberries
  • ¾ cup unrefined cane sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons to ¼ cup water
  • 1 tablespoon lemon juice
  • 1 cup flour of choice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon sea salt
  • 2 tablespoons butter, melted
  • ½ cup buttermilk or a mix of yogurt and water
  • 1 tablespoon each cinnamon and sugar blended together for topping
Instructions:
  1. Place berries in a large skillet, add sugar, cornstarch dissolved in the water, and lemon juice. Toss.
  2. In a separate bowl, stir together the five dry ingredients.
  3. Stir in melted butter and buttermilk. The dough should be sticky and wet.
  4. Cover the skillet and bring to a boil.
  5. Lower the heat to a steady simmer, uncover, and spoon the dough over the fruit, forming small dumplings.
  6. Sprinkling the dumplings lightly with the cinnamon sugar.
  7. Tightly cover the skillet with the lid and steam the mixture over medium-low heat without opening the lid, until the dumplings set and the surface is dry when touched with a fingertip. (about 15-20 minutes)
