Berries mix surprisingly well with salad greens, just add a mild vinegar and a little white cheese for richness! This is one of those salads that should be eaten the day it is made and you will have no trouble doing that!
1 bunch spinach or other salad greens, washed, cut or torn into bite-size pieces
1 cup blueberries washed
1 cup strawberries washed and sliced
¼ cup extra virgin olive oil
2-3 Tablespoons balsamic vinegar
½ teaspoon sea salt
¼ cup feta or goat cheese crumbled
- Toss the spinach and berries in a large salad bowl.
- Combine the dressing ingredients and pour over the salad.
- Gently toss in the crumbled cheese.
