The earthy flavor of lentils and the starchy taste of potatoes are brightened by the addition of orange and lime. Make this salad ahead except for the greens and let the flavors meld. Add the greens right before you are ready to serve and toss well.
INGREDIENTS:
2 medium size yellow potatoes, cut into 1-inch cubes
Dressing:
1 teaspoon cinnamon
1 teaspoon cumin
Zest of 1 medium orange
Zest of 1 small lime
½ cup orange juice
¼ cup lime juice
2 Tablespoons extra virgin olive oil
2 cloves garlic, minced
2 teaspoons sea salt
Greens:
1 bunch seasonal greens, like salad mix
3 cups cooked lentils
½ cup Italian parsley, chopped
STEPS:
- Steam the potatoes for about 10 minutes or until fork tender
- Combine the dressing ingredients in a salad bowl
- Wash the greens
- Add the lentils, potatoes and greens to the dressing.
- Toss gently to mix.
